At MEDIUM and LOW COOKING TEMPERATURES, the best results are achieved in cooking, even frying and browning. Heat the cookware slowly and carefully for even and good cooking results. Once the cookware is heated, all cooking processes can continue at a low setting. HIGH TEMPERATURES should only be used for heating water for vegetables or pasta or to reduce the consistency of broths and sauces. Never use high temperatures to heat the products if you intend to reduce the temperature for cooking afterward. Cast iron retains heat so well that overheating will lead to poor results, food sticking, and discoloration of the cookware surface. Also, always wait until the pores have closed before turning the food. Then, it will release from the pan on its own and won’t stick.
The black enamel was specifically developed for browning at high surface temperatures, which is ideal for achieving perfect browning results. Since cast iron is such a good heat conductor, browning and cooking are possible even at medium heat levels. For all cast products with black enameled interiors, we recommend seasoning the products to unlock their full positive properties.

Cooking with Le Creuset Cast Iron
Enamel-coated cast iron is a remarkable, durable material that meets modern demands for food preparation and cooking. Whether you want to use cast iron for quick searing, stewing, searing steaks, or baking cakes, there is always a suitable product shape and size.
Cast iron is a material that retains heat very well. This is particularly useful at low temperature settings on the stove or in the oven. Cast iron is also ideal for serving: due to its excellent heat retention, food stored covered in warm cast iron stays warm even for a second serving. Cast iron can also be used to keep cold dishes cool. A refrigerator-cold cast iron pot is an ideal storage solution for cool dishes on a hot summer day. Cast iron items are also suitable for food storage in the freezer and for meal prepping in advance.
Oven Use
Products with black phenolic lid knobs are designed for oven temperatures of 200°C (or 390°F) or level 6 in gas ovens.
Products with cast iron handles or stainless steel lid knobs can be used in the oven at any temperature.
Do not place cookware directly on the bottoms of ovens with cast iron interiors, as this will raise the cooking temperature in the oven and lead to overcooking, potentially damaging the food. Avoid dragging your cast iron cookware over the oven floor to prevent damage. For optimal cooking results, always place cookware on a rack or baking sheet in the oven.

The Black "Silk Enamel"
The black enamel is intentionally a bit rougher for traditional reasons. Most people think cast iron is black (when it is actually grey), and the slightly rough enamel transfers the properties of the cast iron to the outside. This creates a traditional appearance for the cookware.
The black enamel was specifically developed for browning at high surface temperatures, making it ideal for achieving perfect browning results. Since cast iron retains heat so well, browning and cooking are possible even at medium heat levels.
The best results in preparing your recipes and food are achieved by cooking at medium or low temperatures or waiting for oils/fats to reach the right temperature. Never use high temperatures to heat the products if you intend to lower the temperature for cooking afterward. Too-high temperatures lead to overheating and food sticking, especially with delicate foods like omelets or egg dishes. Cast iron retains heat so well that overheating leads to poor cooking results, with food sticking and the product surface discolouring.
For all Le Creuset cast iron products with black enameled interiors, we recommend seasoning the products first to fully unlock their positive properties. Through "seasoning" and repeated frying with oil, a natural patina will form over time, which helps achieve even better cooking results when frying.
Seasoning - It's That Easy:
- Clean the pan or roaster with dishwater and dry thoroughly.
- Place the cold cookware on the stove and fill it with 0.5 cm of oil (high-heat oil, e.g., sunflower oil) and use a (silicone) brush or kitchen towel to rub the oil on the sides and grill grooves.
- Now heat the oil at medium heat to the usual cooking temperature.
- Important: Never leave the oil unattended! Stand by the stove!
- Remove the roaster or pan from the heat and let it cool.
- Pour out the oil. Now you can refill it with oil and begin cooking.
- This "seasoning" process is only necessary before the first use (or after cleaning in the dishwasher).
Thanks to the black "Silk Enamel," a patina (a brownish layer) will form on the bottom with continued use. This patina is created by the natural oils and fats from the food that are absorbed into the pan’s surface. It is recommended not to clean or remove this patina with dish soap, as it enhances the frying properties and allows food to release more easily during cooking.
Cleaning Black Silk Enamel Products
- Do NOT remove the patina (the brownish-black layer on the bottom) that forms on the bottom of the pan. It improves frying results and makes it easier to remove food scraps from the bottom of the pan.
- Always let the hot product cool down slightly before washing. If possible, wash the product in hot water and wipe the surface with a damp cloth afterward. This is recommended after normal frying when only minimal food residue remains. For a more thorough clean, you can use hot dishwater, rinse the cookware with clean water, and dry it well. This way, the patina remains intact.
- To remove strongly adhered food residues, fill the cookware with warm water and let it sit for 10-15 minutes. Then rinse it with clean water and dry it as usual.
- A dish brush with nylon bristles can be helpful for cleaning food residue and between the grill grooves. Do not use scouring pads or abrasive cleaners on the frying surface. Frying marks on the outside of the pan can be cleaned with a nylon sponge.
- Never store a still-wet product in the cupboard. Store your cookware in a dry cupboard or another well-ventilated area that is free from steam.
- Le Creuset cast iron cookware is extremely durable, but it can be damaged if dropped or struck on hard surfaces. Please note that such damage is not covered by the warranty.
